Crispy Oven Baked Buffalo Chicken Wings
Keto and crunchy!
No need for an air fryer to get delicious results!
Do I have a fancy schmancy air fryer? Yep. Do I use it very often? Nope. It is bulky and very hard to clean. It does make yummy, crispy chicken wings though. But who has time to clean that thing! My mission was to try to recreate that crispiness using no oil and my regular oven.
The enemy here is moisture
When it comes to crispy anything, moisture is the problem. So to truly make these wings crispy, they must be dried thoroughly by cooking them first in a low temp oven to help with that process. The result is a beautiful crunchy masterpiece! Find more tips for cooking the best chicken here:

We love them sloppy. Soak them in that sauce!
We use lots of napkins when we eat these wings. Hot sauce dripping is what it is all about. I serve them in pasta bowls so that the sauce can puddle in the bottom for even more dipping. Make sure to make the sauce in a pan big enough to hold your wings. This makes one less bowl to clean up!

Crispy oven baked buffalo chicken wings
Ingredients
- 1 lb chicken wings/drumetes
- 4 Tbsp Baking Powder
- 1/4 Tbsp Kosher Salt
- 3/4 cup Hot sauce We like Frank's
- 3 Tbsp butter
- 3 stalks celery cut into sticks
- 4 Tbsp Ranch or Bleu Cheese dressing
Instructions
- Preheat oven to 200 degrees Fahrenheit
- Prepare the wings by removing as much moisture as possible by patting them with paper towels
- Mix the baking powder and salt in a gallon-sized plastic bag
- Place chicken pieces in bag and shake to coat evenly
- Place wings on a rack making sure they are not touching each other. Make sure to have a drip pan underneath the rack to catch the drippings. Bake at 200 degrees for 20 minutes to render out moisture.
- After 20 minutes, increase the oven temperature to 400 degrees and bake for an additional 35 – 40 minutes until wings are crispy.
- While wings are baking, put hot sauce and butter in a large sauce pot and heat on low until butter is melted. Stir to combine.
- Once wings are done baking, place them in the sauce immediately. The heat from the wings will allow them to soak up more sauce.
- Serve with celery sticks and the dressing of your liking.
