Chili Lime Sweet Potato Wedges

The perfect side dish when grilling out, or whenever you need something easy and different. These are also keto friendly. It's a win win!

Ingredients
  

  • 1 large Sweet Potato skin on
  • 1 large Lime zest and juice
  • 2 Tbsp Olive oil
  • 1 Tbsp Chili powder
  • 1/4 tsp Kosher salt
  • 1/4 tsp Fresh ground black pepper

Instructions
 

  • Preheat the grill to 400 degrees.
  • Prick sweet potato with a fork. Place potato in the microwave and cook for 3 minutes. Cut potato in half to allow it to cool while preparing the rub.
  • Zest and juice the lime and add it to a bowl with the remaining ingredients. Mix well.
  • Cut the potato into 8 wedges.
  • Brush each wedge with the lime/oil mixture.
  • Grill for 5 to 7 minutes on each side brushing them often with the lime/oil mixture. Serve immediately.
