Preheat oven to 200 degrees Fahrenheit
Prepare the wings by removing as much moisture as possible by patting them with paper towels
Mix the baking powder and salt in a gallon-sized plastic bag
Place chicken pieces in bag and shake to coat evenly
Place wings on a rack making sure they are not touching each other. Make sure to have a drip pan underneath the rack to catch the drippings. Bake at 200 degrees for 20 minutes to render out moisture.
After 20 minutes, increase the oven temperature to 400 degrees and bake for an additional 35 - 40 minutes until wings are crispy.
While wings are baking, put hot sauce and butter in a large sauce pot and heat on low until butter is melted. Stir to combine.
Once wings are done baking, place them in the sauce immediately. The heat from the wings will allow them to soak up more sauce.
Serve with celery sticks and the dressing of your liking.
