Zesty smoked sausage sheet pan dinner with chili and lime seasonings

At the end of a long hard day, there’s nothing better than 5 minute prep, 30 minutes in the oven dinners that are bursting with flavor. And, you can choose any veggies your family likes and please everyone. It is just a win, win!
The one big secret to success for this dinner is…..
You really need to par cook the sweet potato for 3 minutes in the microwave before cutting into chunks and adding it to the recipe. This will ensure even cooking time with the sprouts.
Zesty Sheet Pan Sausage Dinner
Ingredients
- 1 Large Sweet Potato
- 1 lb Brussel Sprouts halved
- 1 large Lime Zest and juice
- 1 Tbsp Olive oil
- 1 Tbsp Chili powder
- .5 Tbsp Kosher salt
- .5 tsp Red pepper flake
- .5 tsp Fresh ground black pepper
Instructions
- Preheat oven to 350 degrees
- Microwave sweet potato for 3 minutes on high. Set aside to cool.
- While potato is cooling, remove stems from brussel sprouts and cut them in half.
- Peel the potato and cut in approximate 1 inch cubes.
- In large mixing bowl, combine all ingredients except for the sausage and toss to coat.
- Place veggie on a sheet pan lined with aluminum foil.
- Cut sausage in chunks and nestle into the veggies.
- Bake at 350 for 30 minutes. Serve with lime wedges.
