My grandmother’s famous Gumboli

There is nothing better than a secret family recipe!

And this one is so nostalgic that the mention of it stirs up the fondest memories of my sweet little grandmother. Luckily for me, she shared this with me and I had the joy of preparing this for my dear mother on numerous occasions due to her cravings for it and the memories it evoked in her.

Some might think this is just Chili Mac, but it has peas in it. Yep, my grandmother snuck in something healthy…

To be honest, there are things I know I would do differently with this recipe. But, it just doesn’t taste the same when I mess with it. For instance, DON’T prepare the mac n cheese according to package directions. Also, wait until the very end to add the cheese packet and the frozen peas to the dish. And yes, kids will eat peas this way. Man, I loved that woman…

Yes, it's nostalgic, but it's also so very good. My grandmother would make this when we would come visit because it feeds a crowd and it is a kid friendly dish. She even snuck peas in it and we liked it for Pete's sake!

Ingredients
  

  • 2 lb Ground Beef
  • 1 cup Bell Pepper chopped
  • 1 cup Yellow Onion chopped
  • 2 cloves Garlic chopped
  • 1 box Kraft Macaroni and Cheese
  • 1 1.2 oz packet McCormick Chili Seasoning
  • 1 14.5oz can Diced tomatoes
  • 1 12 oz package Frozen Peas
  • 1/2 cup Parmesan Cheese

Instructions
 

  • In a large sauce pan boil 6 cups water and prepare the macaroni. Do NOT follow the instructions on the package. Drain macaroni and set aside.
  • In a large skillet, combine the ground beef, peppers and onions. Cook until meat is browned and veggies are translucent. Drain grease off meat.
  • Add the chili seasoning packet to the meat and mix thoroughly. Add the tomatoes and macaroni. Stir until combined. Add the cheese packet from the mac n cheese and the frozen peas. Stir until combined. Simmer over low heat for 5 to 7 minutes
  • Sprinkle with parmesan cheese and enjoy!
