- 1 Large Sweet Potato
- 1 lb Brussel Sprouts halved
- 1 large Lime Zest and juice
- 1 Tbsp Olive oil
- 1 Tbsp Chili powder
- .5 Tbsp Kosher salt
- .5 tsp Red pepper flake
- .5 tsp Fresh ground black pepper
Preheat oven to 350 degrees
Microwave sweet potato for 3 minutes on high. Set aside to cool.
While potato is cooling, remove stems from brussel sprouts and cut them in half.
Peel the potato and cut in approximate 1 inch cubes.
In large mixing bowl, combine all ingredients except for the sausage and toss to coat.
Place veggie on a sheet pan lined with aluminum foil.
Cut sausage in chunks and nestle into the veggies.
Bake at 350 for 30 minutes. Serve with lime wedges.
