Roasted beets and goat cheese salad
Beets – you either love ’em or hate ’em. I choose love 🙂
The only way I ever had beets as a child was pickled. But as an adult, I started experimenting with different preparations and discovered I love them roasted and with all sorts of yummy combinations. Not to mention, the health benefits of beets include improved blood flow, lower blood pressure and increased exercise performance. So – what’s not to love!
Don’t have time to roast beets? Costco to the rescue!
Costco sells these roasted beets (of course in bulk). There are three bags of them in a box. They last forever until you open the pouches. They are always in our fridge.
Costco also has the absolute best price on goat cheese. Two 10.5 oz logs were only $7.99. That much at Kroger would literally run you $24.00!
Roasted beets and goat cheese – oh my!
Ingredients
- 2 large Romaine lettuce leafs
- 2 large Roasted beets peeled
- 4 oz Goat cheese
- 1/4 cup Roasted chopped nuts almonds, pecans or walnuts
- 4 tbsp chopped green onion
- 4 tbsp Balsamic vinaigrette dressing
- Sprinkle kosher salt
- Sprinkle fresh ground black pepper
Instructions
- Place romaine lettuce leaf on each plate
- Top lettuce leaf with sliced beets and crumbled goat cheese
- sprinkle each plate with nuts, green onion, salt and pepper
- drizzle dressing over each plate
- Serve!
