Roasted beets and goat cheese - oh my!

Beets are either hate or love. I have never heard anyone in the middle on this debate. Thus, if you love, this is the easiest, tastiest recipe ever!

- 2 large Romaine lettuce leafs
- 2 large Roasted beets peeled
- 4 oz Goat cheese
- 1/4 cup Roasted chopped nuts almonds, pecans or walnuts
- 4 tbsp chopped green onion
- 4 tbsp Balsamic vinaigrette dressing
- Sprinkle kosher salt
- Sprinkle fresh ground black pepper
Place romaine lettuce leaf on each plate
Top lettuce leaf with sliced beets and crumbled goat cheese
sprinkle each plate with nuts, green onion, salt and pepper
drizzle dressing over each plate
Serve!
