Pot Roast with a Zingy Twist

This recipe is almost embarrassingly simple, but it honestly is to die for. The zing of the peppers and richness of the sauce makes it absolutely the perfect dinner for busy folks who like flavorful dishes.

  • Crock Pot

Ingredients
  

  • 1 packet Hidden Valley Ranch Dressing Mix use Fiesta Ranch if you like spicy
  • 1 packet McCormick Au Jus Gravy Mix
  • 1 3 - 4lv Chuck Roast
  • 4 Tbsp Butter
  • 1 16oz jar Pickled Pepperocini Peppers Do NOT drain

Instructions
 

  • Spray the crockpot with non stick cooking spray
  • Sprinkle half the packet of ranch mix and half the packet of Au Jus mix in the bottom of the crockpot. Lay the roast on top.
  • Sprinkle the rest of the mixes on top of the roast. Place the butter in the center of the roast. Poor the juice from the peppers around the sides of the roast as to not remove the seasonings. Place the peppers along the perimeter of the roast.
  • Cook on low for 8 hours.
  • Serve over mashed potatoes, cauliflower, traditional roast veggies, rice, etc. You can also thicken the sauce into a more gravy-like consistency if you wish. Make it your own!
