My husband and I have done extensive beer cheese research in KY and have determined this is the absolute perfect recipe with the right consistency to stick to a yummy homemade soft pretzel and deliver a punch of tangy cheddar and beer.

- 2 Tbsp Butter
- 2 Tbsp Flour All purpose
- 1 Tbsp Red Pepper Flakes
- 1 Cup Beer
- 1 Tbsp Kosher salt
- 1/4 Tbsp Garlic Powder
- 1/2 Tbsp Cracked Black Pepper
- 4 Ounces Creamed Cheese
- 2 Cups Sharp Cheddar Cheese Shredded
- 1 Cup Monterey Jack Cheese Shredded
Melt butter in a large skillet and add the flour to make a roux. Stir in the pepper flakes.
Add beer and all spices stirring to incorporate all ingredients. Add creamed cheese in chunks and stir until melted.
Add the shredded cheeses and stir until melted and fully combined. You may need to add more beer if the cheese dip is too thick for your liking. Remove from heat and serve with soft pretzels or chips of your choice.
