Blueberry Goat Cheese Appetizer

- 2 cups Fresh blueberries washed
- 2 Tbsp Balsamic vinegar
- 3 Tbsp Honey
- 1 Tbsp Chopped fresh Rosemary dried can be substituted
- 1 pinch Kosher salt
- 1 tsp Vanilla
- 4 oz Goat cheese
- 4 oz Cream cheese softened
In a sauce pan, cook the berries, vinegar, 2 Tbsp of the honey, salt and rosemary until boiling. Boil for 5 minutes. Add vanilla. Set aside and cool to room temp.
In a mixing bowl, mix together the cheeses. Spread into a small casserole dish. Drizzle with the remaining 1 Tbsp of the honey. Cover with the cooled blueberry mixture.
Serve with your favorite crackers.
