Crockpot Veggie Soup

- 1 lb Choice boneless beef cut for stir fry
- 1 packet Lipton onion soup mix
- 2 packages Frozen mixed vegetables
- 4 cups V8 vegetable juice
- 4 cups Beef broth
- 2 cups water
- 1 can fire roasted diced tomatoes
- 1 tsp kosher salt
- 1 tsp ground black pepper
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- 1/2 tsp Red pepper flake optional
Cut the beef strips into 1/2 inch cubes
Sprinkle the onion soup mix in the crock pot
Add the beef to the crockpot, stirring the beef to coat with the onion soup mix.
Cook the beef on high for 2.5 hours.
Add to the crockpot all remaining ingredients. Stir well.
Cook on low heat for 4.5 hours. Enjoy!
