Ingredients
  

  • 1 lb Choice boneless beef cut for stir fry
  • 1 packet Lipton onion soup mix
  • 2 packages Frozen mixed vegetables
  • 4 cups V8 vegetable juice
  • 4 cups Beef broth
  • 2 cups water
  • 1 can fire roasted diced tomatoes
  • 1 tsp kosher salt
  • 1 tsp ground black pepper
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp Red pepper flake optional

Instructions
 

  • Cut the beef strips into 1/2 inch cubes
  • Sprinkle the onion soup mix in the crock pot
  • Add the beef to the crockpot, stirring the beef to coat with the onion soup mix.
  • Cook the beef on high for 2.5 hours.
  • Add to the crockpot all remaining ingredients. Stir well.
  • Cook on low heat for 4.5 hours. Enjoy!
