I love to take my time and make fancy, shmancy food. However, there are occasions when I just don’t have the time. This recipe is so easy and just so satisfying. Not only that, it makes the whole house smell so yummy. Yet another crockpot plus!
The secret is using beef cut for stir fry
I discovered this beef at my local grocer and use it in various recipes. It is perfect for veggie soup because it has little fat, is already cut in strips and is high quality. I take the strips and cut them into bite-sized pieces. I am almost embarrassed as to the simplicity of this soup!
Crockpot Veggie Soup

- Crockpot
Ingredients
- 1 lb Choice boneless beef cut for stir fry
- 1 packet Lipton onion soup mix
- 2 packages Frozen mixed vegetables
- 4 cups V8 vegetable juice
- 4 cups Beef broth
- 2 cups water
- 1 can fire roasted diced tomatoes
- 1 tsp kosher salt
- 1 tsp ground black pepper
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- 1/2 tsp Red pepper flake optional
Instructions
- Cut the beef strips into 1/2 inch cubes
- Sprinkle the onion soup mix in the crock pot
- Add the beef to the crockpot, stirring the beef to coat with the onion soup mix.
- Cook the beef on high for 2.5 hours.
- Add to the crockpot all remaining ingredients. Stir well.
- Cook on low heat for 4.5 hours. Enjoy!
