Creamy Crunchy Avocado and Cucumber Salad

It never fails, when this is served there are requests for the recipe. Honestly, this recipe came about a few years ago when I needed a salad for my guests and realized I forgot to buy lettuce. I just used the produce I had on hand, including some beautiful avocados and voila!
A ripe Avocado is key to the success of this recipe
We’ve all done it, cut into a dang hard as a rock avocado. Yuck! There are numerous ways to tell if an avocado is ripe. I recommend you go to the experts for advice on this.
And did you know you should actually peel an avocado instead of scooping it out of it’s flesh? Peeling them keeps the creamiest, greenest part of the fruit (that closest to the skin) in tact and elevates all of your recipes that include this unctuous beauty.
Juice your limes this way to get the most juice
First, roll your lime on a counter or cutting board applying firm pressure with the palm of your hand. If zesting, do it now. Next, cut the fruit in half and squeeze as much juice out of each half as you can. Now comes the magic. Stick a fork in it! Yep, do this and twist around until every drop of juice is out of that citrus.
The Recipe:
Creamy Crunchy Avocado and Cucumber Salad
Ingredients
- 1 Medium Cucumber Peeled and roughly chopped
- 1/2 cup Cherry Tomatoes Halved
- 1 large Avocado Peeled and cubed
- 1 large Lime Zest and juice
- 1 Tbsp Olive Oil
- 1 Tbsp Mayo
- 2 Tbsp Cilantro finely chopped
- 1/2 tsp Kosher Salt
- 1/4 tsp Ground Black Pepper
- 1/4 tsp Garlic Powder
Instructions
- Peel and seed cucumber and roughly chop. Or, if using an English cucumber, just chop it.
- Halve the cherry tomatoes and add them to the cucumber
- Peel and cube the avocado and add it to the mixture
- Slice the red onion and add it to the mixture
- In a separate bowl, combine the lime zest, lime juice, salt, pepper, cilantro and garlic powder. Whisk until thoroughly combined. Add it to the vegetable mixture and stir gently to combine so as to not break up the tomatoes.
- Serve with a lime wedge and sprinkle of cilantro.
