Chili Lime Sweet Potato Wedges
Ingredients
- 1 large Sweet Potato skin on
- 1 large Lime zest and juice
- 2 Tbsp Olive oil
- 1 Tbsp Chili powder
- 1/4 tsp Kosher salt
- 1/4 tsp Fresh ground black pepper
Instructions
- Preheat the grill to 400 degrees.
- Prick sweet potato with a fork. Place potato in the microwave and cook for 3 minutes. Cut potato in half to allow it to cool while preparing the rub.
- Zest and juice the lime and add it to a bowl with the remaining ingredients. Mix well.
- Cut the potato into 8 wedges.
- Brush each wedge with the lime/oil mixture.
- Grill for 5 to 7 minutes on each side brushing them often with the lime/oil mixture. Serve immediately.
