Kickin’ Cole Slaw with Pineapple and Jalapeño
Whip up this tasty slaw as a side instead of salad
Cole slaw is so underrated. But it is naturally low in carbohydrate and so darn easy to make. And you know I can’t just make it boring, I gotta jazz it up with something! One of my all time favorite flavor combinations is sweet and spicy, so why not bring that party to some crunchy slaw by adding pineapple and Jalapeño?
Please don’t buy one of those bags of pre-shredded cabbage 😒
I get that people are busy and all, but shredding cabbage in a food processor literally takes less than 5 minutes and the flavor difference is HUGE between doing that and buying a bag of that stuff. And don’t fret if you have no food processor, an old fashioned grater or even just chopping the veggies with a knife work just as well. I have major issues with those salad kits too, but we will address that in another post or two….
Some like it hot!
And, some don’t. So if you aren’t a fan of spicy food you can either remove the pith and seed from the Jalapeño or substitute a green bell pepper. The texture of the pepper is unexpected in slaw and just takes it up a notch. You can also use sugar instead of stevia if you aren’t counting your carbs.
Kickin’ Cole Slaw
Equipment
- Food Processor or Grater
Ingredients
- 3 cups Shredded Green Cabbage Approximately 1/2 head
- 1/2 cup Shredded carrots
- 1 cup Pineapple tidbits in pineapple juice drained
- 3 Tbsp Red onion finely chopped
- 1 medium Jalapeno with pith and seeds finely chopped
- 1/2 cup Mayo
- 1 Tbsp Reserved pineapple juice
- 1/4 tsp Celery Seed
- 2 tsp Stevia or sugar
- 1/4 tsp Kosher Salt
- 1/4 tsp Ground Black Pepper
Instructions
- Shred cabbage and carrot with food processor and add them to a medium sized mixing bowl
- Chop onion and jalapeno and add them and the pineapple to the mixing bowl.
- In a separate mixing bowl combine remaining ingredients and whisk until smooth and thoroughly combine.
- Poor the dressing over the cabbage mixture and mix to combine.
