The secrets to making this taste like it came from a 5 star restaurant…

First, cream cheese is your friend – always. Second, put that frozen bag of spinach on the counter before you leave for work in the morning so that it thaws. Third, do NOT squeeze the liquid out of the spinach. I know – mind blowing! And fourth, always add a pinch of ground nutmeg to your spinach dishes. This gets rid of the funky tooth feel after eating spinach. You are welcome.

Ingredients
  

  • 2 Tbsp Olive oil
  • 1 Tbsp butter
  • 1/2 cup onion finely chopped
  • 1 Tbsp garlic finely chopped
  • 4 oz cream chees cubed
  • 12 oz frozen spinach thawed
  • 1/2 Tbsp kosher salt
  • 1/2 tsp black pepper
  • 1 pinch ground nutmeg
  • 1/4 cup milk Substitute chicken stock or white wine

Instructions
 

  • Heat olive oil and butter in large skillet until the butter is melted and foam is gone. Add chopped onion and cook for one minute. Add garlic and cook for 30 seconds.
  • Add the cubed creamed cheese and stir constantly until combined. Mixture will be gooey and look oily. Just trust me on this.
  • Once cheese is melted ad the undrained, thawed spinach to the skillet and stir to combine. Add the salt, pepper, nutmeg and milk. Stir to combine and cook for 2 to 3 minutes.
